Today I started a Clean Eating Challenge with Rachel Maser, I’m really excited to jump into this, and see how I do! I did all of my meal prep yesterday to try and make the challenge a little bit easier, so lets jump into what I ate today!
For breakfast I am having the clean banana pancakes, water, and a black espresso. To make the pancakes place 1 semi-ripe banana in a blender with 4 egg whites, 1 whole egg, a dash of cinnamon, and a splash of vanilla extract. After it’s blended pour onto a very hot griddle/pan and cook for about 1 minute per side.
For my second meal I had baked salmon, brown rice & quinoa, with asparagus. I’m supposed to have more asparagus than this, but I ran out as I added everything in.
This was the only meal I didn’t like because it’s so bland, but it’s 3 cups of baby spinach, 7 cherry tomatoes, 1/4 cup carrots, and a squeeze of lemon.
I some how forgot to take a picture of my pm snack, it is however in the video shown below. It was chicken, brown rice & quinoa, and asparagus.
For dinner I had 3 cups of baby spinach, 1/4 cup carrots, 7 cherry tomatoes, and 3.5 oz steak.
I have to say I felt good, I didn’t get the headache that a lot of people were getting because I wasn’t consuming a lot of sugar before I started this, I did feel really tired though. I’m going to leave the links for all of my meal prep stuff for any of you that are interested in starting to meal prep, I have to say I love meal prepping, it literally makes life so much easier.
