This morning I started off with my iced coffee and VidaGlow in orange juice. I needed this to give me a little sustenance whilst I made my vegan waffles.
Which you can see look every bit as scrumptious as normal waffles. Here is the recipe:
*Makes 4 Belgian Waffles
1 Ripe Banana
2 Cups Flour
4 teaspoons Baking Powder
1/2 teaspoon Salt
1/4 Cup of Sugar
1/2 Cup Vegetable Oil
2 Cups Almond Milk
1 teaspoon Vanilla/Cinnamon
I always throw it in a big bowl and mix it all at once, I figure trying to do it the “proper” way is far to much trouble when I first wake up lol. Then I top it with EarthBalance which is a vegan butter, Bananas, Strawberries, Blueberries, and Grade A Maple Syrup.
Because of a massive tax crisis, I ended up skipping launch and working all day, so for dinner I wanted something quick and easy, which ended up being takeout haha. I went with the vegetarian Pho and some summer rolls. Both were amazing thought I ate a bit too much and had to take a short nap after lol.
